Fresh and Creamy Bok Choy Slaw

1/4 cup mayonaise (increase to half a cup if you prefer a wetter slaw)

2 tsp milk

2 tbsp. apple cider vinegar

1/2 tsp sugar

1/4 cup fresh parsley, minced

1 medium onion, minced

2 cloves fresh green garlic, minced

1 large carrot, coarsely grated

2-3 cups bok choy, shredded or chopped

salt and pepper to taste

1/8 tsp celery seed or to taste

 

Whisk together mayo, milk, vineagar and sugar until creamy. In a separate bowl, toss together parsley, onion, garlic, carrot and bok choy and pour the mayonaise mixture over top. Toss lightly to blend and season to taste. 

This recipie goes great on fish tacos or on pulled pork sandwiches. Enjoy!
