Spinach-walnut Pesto
Ingredients
- 1/4 cup toasted walnuts,
(see Tip) - 2 slices crustless white bread
- 1 clove garlic
- 1/2 cup cooked spinach
- 1/2 cup nonfat plain yogurt
- 1/2 cup freshly grated Parmesan cheese
- 1 tablespoon extra-virgin olive oil
- Salt & freshly ground pepper, to taste
Preparation
Place walnuts, bread and garlic in a food processor or blender; blend until smooth. Blend in spinach, yogurt, Parmesan and oil. Season with salt and pepper.

Tip: To toast walnuts: Spread nuts on a baking sheet and bake at 350°F, stirring once, until fragrant, 7 to 9 minutes.
